I have the latest software. Has the AVS dev team worked on any of this?
From what I've experienced recently converting DVD PAL to NTSC format neither produces introductory menu screen nor chapters.

Dear user,
Unfortunately for now it is not possible to reserve the menu while converting DVD in AVS4YOU programs.
However you can create your own menu with chapters:

Please let me know if I can be of any further assistance to you.
Kind regards

By the way, I would like to ask which menu style would be the most appropriate here?
