The AVS photo editor will allow cropping of the whole picture, the top and bottom and the left and right, but it does not allow cropping of individual sides, Why?

You can crop individual sides too. Just untick the option "Proportion constraint" in the settings window and drag the boarders and the image to adjust the cropping area.

I have done this, but when I clich the left side, the right goes with it and vice versa. Same when I click on the top or bottom. It will not let me do just one side.

You can move the picture itself: click on its center (you'll see the 'hand' pointer) and move the image to fit it into the crop area selected.
We will consider improving this function in the future versions.

Cropping is very problematic indeed. I think the check box is not working. I agree that to individually drag the sides would be better. I was having a hard time doing this as well. I hope the next version will also have a straighten feature that is as simple as drawing a line to represent vertical or horizonal without having to tweak the angle or rotation.
