I'm sorry, but your question is not clear.
So, I propose several solutions to your possible questions:
1. If under MENU you mean the button of the return to the main DVD menu, in AVS DVD Authoring it is called MAIN in the Chapters page (see picture 1). Surely, you can rename it as you wish.
2. If you just want to is only possible starting a new
custom project. To start a new custom project, please go to the
File section of the
Main Menu and select the
New Custom Project option. Here it is
