Is there not a way to rip only a few chapters and create a single file? Also, what is "batch mode" designed for?

That is possible using AVS Video Converter 6.

So, please:
1. Launch AVS Video Converter 6 and choose the input file
2. Press Edit button
3. Use markers, to select the unwanted parts of the video on the Timeline
4. Close the Edit window
5. Set the profile parameters
6. Convert Now!

Batch mode allows you to convert a number of video files into several files of selected format.
